
Man has been collecting honey for use as a sweetner for thousands of years. Honey is produced from nectar gathered by honeybees from area plants. Flying up to 15 mph, a bee may visit between 50 and 100 flowers during one collection flight. The bees add enzymes to the nectar and reduce the moisture content. A mixture of fructose, glucose, water and other enymes, minerals, vitamins and amino acids, honey contains flavonoids and phenolic acids that act as antioxidents. The color and flavor of honey will vary with the different types of plants from which nectar is gathered. Darker honey usually contains more antioxidents than light colored honey.
